Plum Chutney Vegan Pork Tenderloin

This recipe brings back memories of one of our nights in Vienna, Austria. After a prolonged visit to the Belvedere Museum of Art and a walk through the gardens at dusk, the weather started to turn. We had planned for a dinner outdoors not far from the city center, but instead the misty, chilly rain had us looking for an alternative closer to the place we were staying.

By chance we stumbled upon the only venue that perfectly reflected our mental and physical state, as we were enlightened by a full day of cultural grandeur but now tormented by a craving for comfort food. One glance at the menu and knew we had found the right place. A hearty yet delicate, elegant dish with a robust contrast of sweet and savory, this dish just checked every box.

Years later, while reminiscing about our days in Vienna, Gloria decided to experiment and created a vegan alternative to this wonderful meal.

Plum Chutney
  • 8 Slices of Seitan
  • 2 Black Plums – diced, skin on
  • 2 Small Golden Beets – diced, peeled
  • ½ White Onion – diced
  • 3 tbsp Butter – plant-based
  • 5 Bay Leaves
  • 1 tsp Salt
  • ½ tsp Black Pepper – cracked
FOR THE CHUTNEY

Melt butter in a small saucepan. Add the onion and cook for 5 minutes, until translucent. Put in the beets and plums, and season with salt and pepper. Simmer on medium-low heat, with the lid on, until a chunky marmalade-like substance is obtained, roughly 15 minutes. Set aside until you are ready to eat.

Transfer the chutney to a skillet large enough to fit the 8 slices of seitan and set to the burner at a low heat. Once the chutney is warm and starts to bubble, add in the slices of seitan and cook to coat for 5 minutes per side. 

Serve immediately.

EXTRAS AND TIPS

Ripe plums (or even those that are a bit past their day) make the best chutney. We like to leave the skin on because it is full of vitamins, but you can take it off if you prefer to have a smoother and less chunky chutney.
