Vegan Pumpkin Baked Donuts

the Donut
  • 1 ¼ cups all-purpose flour
  • ¾ cup pumpkin puree
  • ½ cup butter, plant-based
  • ½ cup brown sugar
  • ¼ cup milk, plant-based
  • 1 tbsp molasses
  • 1 tbsp apple butter
  • 1 tsp baking powder
  • ½ tsp apple cider vinegar
  • 1 tsp allspice mix
The Streusel
  • 3 tbsp softened butter, plant-based
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • 1 tbsp apple butter
  • 1 tsp allspice mix

In a small bowl, rub the softened butter with the rest of the streusel ingredients. Use either a fork or your fingers to form a crumbly mixture. Chill until ready to bake the dounuts.

In a heat proof bowl, melt ½ cup of butter in the microwave. Set aside for later use. 

Preheat the oven to 370°F.

In a large mixing bowl, combine the pumpkin puree, brown sugar, apple butter, milk, molasses, allspice mix, and melted butter. Sift in the flour while combining with a spatula. Mix until all the ingredients are thoroughly incorporated. Do not overmix.

With softened butter or oil, lightly grease a non-stick 6 yield donut pan and set aside until ready to bake.

In a small bowl, put the baking powder and sprinkle the apple cider vinegar over the powder. It will fizz, which is exactly what you are looking for. Scrape the wet powder off the bottom and sides of the bowl and into the batter. Mix well until thoroughly incorporated.

Immediately transfer the batter into a piping bag and, with a large tip, pipe the donuts onto the greased pan. Sprinkle the chilled streusel crumbs over the batter and bake for 15-18 minutes on the medium rack of your oven.
